Wash the peppers and cut a thin slice from the top of each pepper. Core and remove the seeds. Heat 2 tablespoons ghee and fry the spices for two minutes. Add the vegetables and potato, lemon juice and salt. Cook till the vegetables are tender. Stuff the peppers with the mixture, close with the sliced tops and gently fry in the rest of the ghee for five minutes. Add a cup of water, cover and simmer till the peppers are tender.

Stuffed Marrow

2 small marrows

For the stuffing:

1 tablespoon ghee

1 onion, finely chopped

2 green chillies, sliced (optional)

1 tablespoon chopped coriander leaves

1 cup green peas

1 cup panir cubes

1 teaspoon salt

For the sauce:

2 tablespoons ghee

2 onions, chopped

1 teaspoon salt

1 inch (2.5 cm) piece ginger

1 teaspoon coriander seeds

½ teaspoon turmeric powder

½ teaspoon cumin seeds

1 teaspoon garam masala

½ teaspoon paprika or chilli powder
